A modern bar with a stone accent wall, shelves of liquor and wine, a marble countertop, blue bar stools, and a large painting of a highland cow—part of the Wild Game Series—showcasing the spirit and hooves of the wild above the bar.

Wild Game Series: Hooves

October 18 - November 2, 5pm - 9pm

A plated steak garnished with edible flowers and herbs, served with bone marrow, is the star of this dinner; sides of vegetables and a covered dish complete the menu in the background.

Ember's Wild Game Series

October 18 - November 2

Embark on an unforgettable culinary journey with Ember’s Wild Game Series, inspired by Chef Nicole Heaney’s roots growing up in the mountains of Wyoming. This quarterly experience honors the rugged beauty of the wild, masterfully expressed through the elemental art of open-flame cooking. Each installment of the four-part series—Hooves, Fins, Feathers, and Claws—presents a menu of unparalleled artistry, transforming wild ingredients into refined expressions of taste.

The journey begins with Hooves, featuring daring and decadent dishes such as Braised Elk Tongue Tostada, Grilled Camel marinated in aromatic spices, and Smoked Bison Short Ribs. Immerse your senses in this tribute to terroir and tradition, available for a limited time only.

To kick off the Hooves experience, we invite you to an intimate prix-fixe dinner on October 18, hosted by Chef Nicole Heaney herself. Limited seating is available throughout the evening; don’t miss the chance to be part of this one-of-a-kind dining experience.
